There's a branc new menu at Vækst and you can choose from a trip on the sea, the countryside or the garden – a haven for vegetarians. And the lunch menu offers reinvented Danish classics, making your tastbuds rejoice. 

Green and fresh is the best during the wintertime and right now, Vækst is bursting with everthing that we Northerners do best in the kitchen. The new evening menu is diveded in three journeys: The Sea, The Countryside and The Vækst Menu, which is 100 % vegetarian. 

The Countryside tastes like this:
Tartelette with chicken from Hopballemølle, morrel sauce & pickled salsify roots

Roasted veal ribeye with pepper sauce & pickled oniones

Blueberries with junket fromage

Making it easy being a vegetarian
We also honor the greens by making the Vækst menu 100 % vegetarian. This makes it super easy dining out as a vegetarian, even in the company of carnivores and pescetarians. 

This is our vegetarian Vækst menu:
Jerusalem artichoke with apple & jerusalem artichoke chips

Salt baked celery with truffle vinaigrette & hazelnuts

Apple porridge with caramel, lemon, thyme & apple sorbet

Sea is 350 DKK, Country costs 425 DKK, while the Vækst menu is 325 DKK. There are wine pairings for all thre menus, and you can also choose ‘An evening at Vækst’, which includes aperitif, food, wines, water and coffee for 625, 695 og 595 DKK respectively.
