A bite of Piemonte; Vitello Tonnato

In the Northwestern corner of Italy, right there on the border of France and Switzerland, you'll find Piemonte. A picturesque are which in many ways embodies everything we love about Italy; football, enchanting wines and last but not least, sophisticated yet simple food, crafted with love. From that love springs everyone's Vitello Tonnato.

It is a rather odd couple, veal and tuna - "strangers on a plate" as New York Times proclaims it. It is tho like where they meant for each other in this union. The finely sliced pieces of veal meet the soft, tender tuna. Sea meets the ocean. It's a dish you either love or hate, but for all those who love it, every bite is a taste of Italy. 

From February 20th, chef de cuisine Charlie Frederichsen has brought this dear Italian antipasti back on the menu at Vespa for you to enjoy it just the way it should be; as a jewel amongst other antipastis, with a little focaccia sul lato.
