The menus at all Cofocos restaurants change according to season and availability. On every menu there's always that one dish that quickly become a house favorite. Favorites we'll now begin to share with you each week. This week your dish from us is the herb breaded pork tenderloin from Danish organic farm Grambogaard at Vækst

Vækst stems from the passion around vegetables and everything that sprouts, later to be harvested, which is why it is the perfect extension of Høst. Vækst is currently serving a new Green Menu, a vegan take on our menu, which will convince even the most delicate meat-enjoyer. Not said that we don't serve meat. We're just very conscious of what we choose to put on our menu. 

This time we've sourced some fresh, moist port tenderloins from Grambogaard. They've been powdered with herb breading, fried and is served with salted blackberries, freshly grated horseradish and a vinaigrette made with browned butter.
