Mezcal for every taste at Llama

As the Latin-American cuisine is rising in popularity in Denmark, the interest for the traditional drinks has also risen. One of the most well-known beverages are the Mexican tequila, which this time around has brought its friend with it. The Danes have been Introduced to the also agave-based liquor called mezcal.

 

Mezcal and tequila are both made from the agave-plant, but the fundamental difference is in the production process. Mezcal is made from the piña, or the heart of the agave plant. Once the plant is old enough (app. 6-8 years) it is harvested and the leaves are removed so only the piña is left. When the agave is processed, it is baked in an underground ”oven” laced with hot stones, agave leaves, mats and soil. All of this is done, to give the mezcal the characteristic taste of soil, wood and smoke. Mezcal can be produced in 8 different states in Mexico, opposed to tequila which can only be produced in the Jalisco-region.

 

Mezcal is very important in Llama – whether it’s to be enjoyed as a sipping after dinner, as the beginning of the evening in a cocktail, or to compliment the Latin-American dishes in the menu. The Latin-American kitchen is full of flavors, from acidity, to chili-spicy or smokiness. Similar to that – mezcal is produced in a wide variety.

 

The mezcal-list at Llama consists of more than 20 different kinds of mezcal, which means that it is possibly to find a mezcal for every taste. The list also includes 5 different kinds of mezcal called Bruxo, which Llama can proudly call collaborators. The five mezcals numbered from 1-5 all represent different flavors, from Bruxo nr. 2 with notes of citrus and caramel, to Bruxo nr. 4 whose expression is more fresh with notes of herbs. Besides the opportunity of enjoying mezcal as a sipping, it is also used for cocktails in Llama. For example, it can add a twist to a classic margarita or be complimenting to the tasteful elements like cilantro and limejuice in “Los Santos Oleos”. The latter, is for example very enjoyable together with the delicious halibut ceviche.
